She's One!

Alright folks, my little bundle of Lottie Joy, is now one. She has grown so much in the last year. She's turning into a dog, and what a beautiful dog at that. I can't believe it's been almost a year since I got her, I got her February 4th, and she was born on December 1st. She was so tiny, so wiggly, cuddly, and I love her so much! She would sleep for hours on my lap while I watched "Rawhide" *sighs*
I started training her right away, sure it wasn't full of fun all the time, she could get on my nerves but that's what puppies do. Right off the bat she wanted to please me, she loved to sit and look at you with her big pooling puppy eyes. She still loves to do that. If it wasn't for Gary and his kindness I wouldn't have my bundle of Lottie Joy, and I wouldn't be doing this post.
It still surprises me when I realize, I was given Lottie, given! She was given to me! I had prayed that maybe I would open the door and there would be a puppy with a note saying, "keep her" But I knew that would never happen, but maybe I would be given a puppy, nah, that would be crazy. Well, the Lord can do what He sees fit, and He thought I needed a puppy. And I believe with all my heart that He sent her to me so I wouldn't be lonely when my Sister moved away. The Lord is good, and I thank Him everyday for giving me my wonderful, lovable, Lottie Joy. She's the sweetest thing ever. And I am SO thankful for her, she's my best friend, and I love her with all my heart.       





She sure has grown. *sighs* She was once so tiny I could hold her.
But now, now she's so big she can hug me when she stands on her hind legs.

Remember, God will answer your prayers, He will help you in hard times, He never leaves you or forsakes you. God is always there in times of need and comfort.

Mothers || A Gift From God

I think, but it can just be me, I have the best Mother on earth. She loves the Lord dearly and shows His love each and every day of my life. I know she’s worried nights and day about us kids, but that’s what Mother’s do, God made them to be loving and caring. And I think one of the most wonderful things on this earth is a mother. I know I love my Mother dearly. Just take time and think about how much She’s done for you, how much’s she’s cared for you, sat by your side in times of illness, and times of sorrow. My mother is a wonderful woman, she’s kind, caring, loving, and God-fearing. And if I grew up to be half the woman she is, I’d be happy with it. I pray that God can help me to grow and be a wonderful young lady, sure we all make mistakes, but nobody’s perfect, only Christ Jesus is perfect. I hope this was something for you all to hear, I’m not much of a writer, but I wanted people to know how much my Mother means to me, how much I love her. Take the time out of your day and give your Mother a hug, tell her you love her and thank her for always being there for you. I know I fail at showing how much I care about her sometimes. Help her out by not complaining when she asks you to do something, by doing her hair just because you love her, and by giving her a helping hand. Do things that make her happy and show her love and kindness. Mother's are a gift from God.
Well, I guess that’s all, but just remember this, your Mother loves you a ton, and just think, the Lord Jesus loves you even more!

The Story Of How I Got My Lottie Joy


HEY ALL! I thought you might like to hear the story of how I got my Lottie Joy. 
As you all know, she's my puppy and best friend. So please take a seat and enjoy.

Sometime last summer I decided that I wanted a puppy. 
I had never remembered having a puppy, because when we got our dog Echo I was almost four. 
So, I set about looking every day on Craigslist for puppies, I only had fifty-three dollars to my name and I was going to use all of it to buy myself a new best friend. I had dreamed all day, and every day about the day I got a puppy. I wanted a Golden Retriever or a Labrador. 

One Sunday afternoon our church had a pot luck\nut auction, I was sitting in the front row of seats when my Dad called my name, “Liberty, tell Gary what you’ve been saving up for”
At first, I was confused, I thought a moment then remembered, “Oh! I’m saving up for a puppy” 
Gary nodded, “Hmm, what kind of puppy?”                                                              
“A Golden Retriever or a Labrador” I had answered.                                            
Gary nodded in reply and I turned my attention back to the nut action.                       
I bought a few things with some nuts and then we took a break for snacks, I walked
towards the kitchen when my Dad caught me up in a hug, “Gary said he’d look into finding you a puppy”                                                                                                       
I couldn’t believe my ears, Did he just say what I thought he said? I thought to myself, then I jumped back into realization, I grinned, “Really?!”                         
“Yep, he just said he’d look into it though” My Dad answered                                     
I nodded, my belly decided to invite some butterflies making me get all squirmy. I kept giggling to myself, Am I having a dream?                                            

Day’s went by without a word, and I sort of put the thought behind me.                 
Then one evening my family and I sat around the table eating supper when my Dad’s
phone made noise, I just kept on eating, my Dad stood next to the table with his phone, he looked surprised, then he showed it to my Mom, her eyes popped out of her head and she gasped, “No way?!”                                                                               
My Dad had a little smirk on his face, then he asked, “Should I tell her?”               
Now I was getting curious, I looked at my Dad, he was looking right at me,       
“Gary found you a puppy” My Dad had said                                                                 
I dropped my fork, my hands flew to my face, and without even thinking I started to cry, I had prayed every night and day that God would somehow help my get a puppy, and here it was, I was going to get a puppy.                                                                
My Mom took me into a hug and I cried some more, my Mom laughed, “Look, you’re making me cry”                                                                                                              
I was so excited I couldn’t even finish supper without shaking.                             
After supper I called my best friend Damara to tell her the news, while I told her I jumped up and down and squealed like a little girl.                                                          

Then it so happened that the puppy I was going to get Gary had backed out, He had asked questions and found out that the puppy had just healed from an ear injury and the father was obese, but he had found a different one and I wouldn’t get her until, February third. I was a little bit disappointed because my sister Felicity would be gone, moved away to New Hampshire and she wouldn’t be able to see my puppy.          

Then after what felt like an eternity, the day came that I was going to get her, but the dog breeder never called Gary, so I got settled down to wait again.                         
The next day was Sunday, Damara had spent the night and we got ready to got to church, I packed a bag of clothes and stuffed the collar I had bought for my puppy into the bag, I turned to Damara, “Just in case they bring her to church” Damara nodded in reply.                                                                                                                           
So, off we go to church. After a while we got there and went inside, Damara and I were sitting on our bench when Sandy, Gary’s wife came up to me, “You need to come with me”                                    
I jumped up and followed, we went out to the parking lot and there she was, a little yellow lab, I almost melted into a puddle, I walked over and picked her up, I had gotten my puppy, I slipped the collar on her, and here was my Lottie Joy.

Caramel Popcorn

 Hey friends! I was hungry and wanted something fall, so I made some of my Auntie's caramel popcorn. It's considered healthy.

ANYWHO.

This a nice cozy type snack. Enjoy.






RECIPE:

20 cups of plain popped corn

1 cup. brown sugar

1/4 cup. honey

6 oz. butter (we use coconut oil, less then the amount of butter, about 1/4 cup to make it dairy free)

1/2 tsp. vanilla extract

1/4 tsp. baking soda

sea salt to taste

Pop popcorn into a bowl. In a medium/smallish pot melt sugar, honey, and butter (or coconut oil) and simmer for 5 min. (the coconut oil won't mix in like butter) Remove pan from heat and add vanilla and baking soda. Pour warm liquid of the popcorn. Mix to coat evenly. then place it on a cookie sheet, and bake uncovered for 15 minutes at 300*. For a sweeter treat less popcorn. For a less sweet corn add more popped corn. Use sea salt to taste.

Blueberry Buckle

 Well folks, I finally remembered that I promised you this recipe *sticks tongue out* I had forgotten.
But I'm here with the recipe, so you can all enjoy some delicious blueberry buckle. You don't have to put blueberries in it if you don't want to, but that's what we've always done.
I always make it for breakfast, but you can make it whenever you feel like it! :)




RECIPE:

1 1/2 cup. flour (or 2 if making with blueberries)

3/4 cup. sugar

2 1/2 tsp. baking powder

3/4 tsp. salt

1/4 cup. shortening

3/4 cup. milk (we use almond milk because some of us can't tolerate dairy)

1 egg

TOPPING:

1/2 cup. sugar

1/2 tsp. cinnamon

1/3 cup. flour

mix and add 1/4 cup. butter (we use coconut oil for making it dairy free)

Preheat oven to 375* Grease 9x9x2 inch pan. Blend all ingredients. Beat fast for 1/2 minute. Sprinkle topping over top, (we just spread it, it works better that way) Bake for 45-50 minutes.

Soft Pretzels


 Hi guys! I thought I'd show you all what I made today! I made some soft pretzels, and they were SO GOOD!!! We've made them a lot, the last time I made them was when Felicity and Josiah were still here and me and Josiah made them, it was so much fun to make them with him. So today while I was making them I thought about Felicity and Josiah, and missed them.... BUT enough of that! Time for some pictures!

Yummmmmm! They were SOOOOOOOO goooooood! 



RECIPE: 

1 1/2 cups. warm water

1 Tbsp. sugar

5 tsp. yeast

4 cups. flour

1/4 cup. melted butter

1 tsp. coarse salt

Mix water and and sugar together in a small bowl until sugar is dissolved; add yeast. Let mixture stand until the yeast softens and begins to form a creamy foam, (about five minuets) 
Whisk flour, butter, and salt together in a larger bowl until well mixed; add yeast mixture and stir with a fork until dough starts to cling. Turn dough onto a floured work surface and knead until smooth. 

Put a big pot of water on the burner with a 1/2 cup of baking soda and let boil; after your pretzels are made dip them into the baking soda water, then sit on pan and put egg and salt on them and bake.  

Makes about 15  

BAKE: 8-12 minutes at 425*F
